Pasta ala Young

Saturday: This is my 6th day of working my @$$ to the fullest… Yes, I work 6 days a week and was on call for tomorrow (it was confirmed an hour ago that’ll I’ll still be working tomorrow - uhg!!!)

Though I have plans for tomorrow, work comes first as always lol (Hello, surebowl na pera na yon no! Hahahaha) My plan was to throw ChuvaChienes a surprise brunch on our patio (O diva) Eh ganun talaga hindi naman nya ako babayaran no so papasok na lang ako lols…

To make up for tomorrow? What I did is just cook us a dinner (Kahit na medyo pagoda tragedy ako!)… Pasta ala Young… Since it’s still summer, this pasta that I just cooked is perfect for summer… Take a look!

Ekkkkkkkkkkkkkk ano to? Hehehe, wala daw alat… Ibang klase to!!! Naamoy pa din, pambihira… That is Reyns!

How to:

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 10 minutes.

Put the chopped tomatoes (roma - no seeds *squeezed it!*), feta, extra virgin olive oil, basil (whole) in a saucepan.

Drain ans toss the pasta with freshly squeezed lemon juice in that saucepan. See how the tomatoes will moisten this pasta ala Young… Grate the lemon for the zest.

Believe it or not - I have beaten Rachel Ray’s 30 minute meals no. It took me roughly 20 minutes to do this…

1 pound spaghetti
a drizzle of extra virgin olive oil
chopped feta (goat cheese)
fresh lemon juice (about 2 lemons)
salt and ground black pepper
lemon zest
fresh basil leaves (whole)
chopped tomatoes (roma)

Peeps - - if you love feta, you’re going to love this dish. You can taste a bit of tartness from the lemon zest and the sweet basil added much flavor to the dish that gave it its exotic flavor.

I particularly don’t like feta but it could be replaced with ricotta cheese and you will have the same experience. Well done YoungCan!

Very Meditteranean naman ang pasta na to, as in, pasta na naman. Anovey !?! Sa BJ’s or Sam’s ba kayo bumili at mukhang never ending supply of pasta ata yan. Pero I like the idea. As if you visited Capri or Greece at talagang inspired by this region ang recipe.

Tama yan, gurl. To save time, just buy roast chicken. It’s cheap, fast, convenient and delicious lalo na kung bagong luto. You can also use it in a variety of ways like traditional chicken salad, or over a bed of greens (spring mix, arugula, baby spinach or watercress) tossed with a simple dressing of olive oil and lemon juice and/or red wine vinegar.

Although the feta should also provide you with the salt.

Her dressing is delicious and easy to make (as long as may food processor ka) and you can serve it with Asian-inspired salmon or mix in shredded rotisserie chicken and garnish with hard boiled eggs for a complete meal. Check it out here or an easier version here. The Asian inspired salmon is here. Enjoy!

Sino ang bago nyong border ha? Cheezmiz yan. Legal ba yan? (Immigration !!!) Charing !!!

I already tried her Szechuan Noodles and I can guarantee na masarap sha. Even sina Markus and Nelson liked it dahil I brought it to Markus’ one night long time ago. I still have to try though the alternative easier way (Crunchy Noodle Salad) coz it is supposed to have the same flavors but without using a food processor.

Another thing you can try is the Pasta Pesto with Peas from Ina Garten as well. Tried and tested ko yan at even dito sa office, yan ang laging niri-request na dalhin ko for pot luck. You can find it at http://www.foodnetwork.com/recipes/ina-garten/pasta-pesto-and-peas-recipe2/index.html. Although I usually use pecans instead of walnuts dahil ayaw ni Bud ng walnuts but he loves pecans. At saka, you should lightly toast the pine nuts and pecans (separately dahil mas madaling masunog yung pine nuts) for more flavor.

Hay naku, Ms. Chuvaness. I know we have not met but I have lurked in your blog as well and haylavit ! Mukhang ka-aliw kang kasama. You remind me of my barkada when was still in Manila.

If I only have time to arrange things and take pictures of everything, I probably would blog too. Bilib nga ako dyan sa mga friends ko dahil after a day’s work, may energy pa sila to think of topics to write about, take pictures, crop and edit them and organize them in an entry. I hate writing when I was in college. It just so happens that I love food so much that I get passionate about it. That’s why I am so happy that Young has her food blog.

Hahaha …
