herb chicken limone

Serve with pita bread and potato salad. (Am sorry if I haven’t been really active these past few days, I am just busy!)

Cut whole chicken into half (butterfly!)
1 cup freshly squeezed lemon juice
1 cup extra virgin olive oil
6 garlic cloves - chopped
A pinch of salt and freshly ground pepper
1 teaspoon fresh rosemary - chopped
1 tablespoon of freshly chopped mint/basil leaves

Start rubbing the chicken with the marinade ingredients until smooth and well blended. Reserve at least a quater of a cup, for basting while grilling. Pour remaining marinade over chicken.

Do a slow cook on the chicken at least 15 minutes per side, brush with the reserved marinade. Enjoy!
